Chapter 1 -Stoichiometry

  • An example of stoichiometry is the chemical formula for water. It's H2O. A chemist might think this is a nice, even number, which strongly suggests that water is composed of equal hydrogen and oxygen parts. But that's not a definition of water. Water could be composed of equal parts of hydrogen and oxygen or equal parts of hydrogen and a mixture of oxygen and chlorine.
  • What matters is that the chemical formula for water is H2O, not H2O = H+ + O2. This means that water has a counterintuitive property: its properties are not defined by its chemical composition; as far as chemical composition goes, water can have any proportions of hydrogen and oxygen it likes.
  • This counterintuitive property is called "stoichiometry."
  • Stoichiometry is the art of calculating the amount of everything you will need in advance. It is based on the principle that, in any chemical reaction, the products of reactions are always more concentrated than the reactants. It's not easy to teach, but it has been known since antiquity; there are recipes for it in the cookbooks of ancient Rome.
